Recipe: Fire Roasted Brussels Sprout Salad

 

1lb fresh Brussels sprouts

4 TBS rendered bacon fat

¼ cup feta cheese

1 tsp granulated garlic

1 tsp onion powder

¼ cup dried cranberries

¼ cup roasted pepita seeds

2 sliced green onions

1 cup plain Greek yogurt

Kosher salt

Cracked black pepper

1 lemon – juice and zest

¼ cup fresh local maple syrup

Method

1.     Wash and quarter the Brussels sprouts

2.     Heat a cast iron pan over the fire and melt bacon fat

3.     Once the pan is hot add Brussels sprouts and cook till golden brown and tender. Season with salt and pepper to taste

4.     In a separate bowl combine the Greek yogurt, lemon juice, lemon zest, granulated garlic, onion powder, maple syrup, salt and pepper to taste. Whisk together until well incorporated and taste for seasoning adjust if needed

5.     Add your browned sprouts to your serving dish and drizzle with the yogurt dressing

Top off your salad with the dried cranberries, feta, pepitas and sliced green onions
