Recipe: Chimichurri
1 bunch fresh parsley
5 cloves of fresh garlic
1 red Thai finger chilli (These chillies are mild however you can use any chilli you would like based on your preference of heat)
Kosher salt
Cracked black pepper
ΒΌ extra virgin olive oil
ΒΌ red wine vinegar
Method
1. Finely chop the parsley
2. Finely chop the garlic
3. Cut the Thai chilli in half then into quarters and remove seeds (optional to leave seeds in for more spice)
4. Fine dice chilli
5. Combine all remaining ingredients into a mixing bowl and season to taste
