Recipe: Seared Tomahawk steak

 

1 Tomahawk

Kosher salt

Cracked black pepper

Grapeseed oil (or other high flash point oil)

Rock salt

 

Method

1.     Bring steak to room temp

2.     Heat oil in a cast iron pan

3.     Season heavily with kosher salt and pepper

4.     Sear till golden brown on all sides

5.     Remove from heat and wrap in tin foil

6.     Place on hot coals (not too hot as you only looking to complete cooking not continue to sear meat)

7.     Cook to the desired doneness (Med rare is an internal temp of 130F)

8.     1.     Pro tip: remove from the heat around 120-125F for a perfect medium rare and rest for 10-15 min covered the temperature will rise and the juices will remain in the steak rather than on your cutting board, if you like it rare as we do, take it off at 115F

9.     Once rested, remove meat from the bone and slice into strips against the grain and season with rock salt.
